VitaMatcha Pancakes

  • 40g coconut flour
  • 1 tbsp VitaMatcha
  • ¼ tsp baking powder
  • 6 egg whites
  • 125ml buttermilk
  • 1 tbsp honey (or maple syrup or agave nectar)


  • Combine all ingredients in a small food processor or blender until well combined
  • Coat a non-stick pan with cooking spray over a medium-high heat
  • When pan is hot enough, slowly ladle the pancake mix into the pan cook until the top is covered in bubbles
  • Very delicately flip the pancake and cook until the second side is golden
  • Garnish with whatever you fancy, but we suggest a dollop of Greek yoghurt, fresh fruit & drizzled with honey
