Sponge/cupcakes with Blackberry & Vanilla buttercream frosting!

Or for those of you from Scotland – the lovely black berries know as Brambles!

I had some eggs and blackberries to use up and discovered a gorgeous tube of vanilla bean paste in the cupboard.  My brain made this; (It’s only half a Victoria sponge as I didn’t have enough butter)

225g of Butter

225g of self raising flour

225g of caster sugar

2 tsp of baking powder

4 large eggs

Heat oven to 180 Celsius, combine in bowl – cook for 25 minutes (don’t open oven to check – leave it 25 mins!)

Icing;

5 or 6 blackberries/brambles – pureed and strained through a sieve

280g of Icing Sugar

140g butter

a touch of vanilla paste

1-2 tbsp milk

Use VERY soft butter, add half the icing sugar, beat till smooth, add the other half with a little milk and finally the vanilla and strained blackberry.

Decorate your cake (or you can make cupcakes)  I used more blackberries and some edible silver glitter!!
